Adam Smith never thought about what it would be like to celebrate a restaurant’s 15-year anniversary.
“I never looked at where I’m going to be in two, 10, or 15 years,” Smith said. “It was always what was going to happen tomorrow.
“I’m amazed that it has been 15 years, because I never thought about it much.”
Smith was given the chance to celebrate, as his Italian restaurant, Arezzo Ristorante, celebrated its 15th anniversary March 23.
Smith’s dream of opening an Italian restaurant in Minnesota began after he visited Italy approximately eight or nine times during the 1990’s and fell in love with the culture and food he experienced. Smith often visited the town of Arezzo, which he called Italy’s hidden treasure, located roughly 30 miles from Florence.
Smith then settled on a location in Edina and published an advertisement in an Italian newspaper to find an executive chef.
Gabriele Lo Pinto responded to Smith’s advertisement, and the two worked together to bring Edina an authentic Italian restaurant.
“I’m just a guy from Bloomington, what do I know about Italian food?” Smith said. “I found a great chef, brought him back and here we are.”
Lo Pinto spent a year at Arezzo Ristorante before leaving to pursue opening his own restaurant. Lo Pinto remained a consulting chef with Arezzo and returned to Arezzo March 23 to help Smith design a 15-year anniversary special for the restaurant to serve during the next month.
